When we were first married, and I was beginning my recipe collection, I asked some of my friends if anyone had a granola recipe that they really liked. Granola is one of my favorite cereals and I knew that having a great basic recipe was a must! I lucked out when my friend, Mary, shared her mother-in-law’s recipe with me. It’s been a staple in our home ever since! The original recipe called for 1 1/2 c. brown sugar. I use a combination of honey and sugar, and both ways are delicious.
This is a crazy delicious coconut almond granola, and it takes only minutes to gather and mix the ingredients. Couldn’t be simpler! We eat granola in a bowl with milk 90% of the time, but also like snacking on handfuls of it as well as sprinkling it on top of yogurt.
The Best Grains and Mix-Ins for Granola
The main ingredient in granola is oats. For this recipe the best oats to use are old fashioned rolled oats. You can use quick oats as well. In fact, it’s what I used for this batch because it’s what I had on hand! The flavor is the same, but you don’t get as many clusters. The recipe calls for 8 cups of oats. You can drop that down to 7 cups of oats and substitute a mixture of flax seed, wheat germ, quinoa, or any other grain you’d like to add.
What kind of oil do you use in Granola?
I use canola oil, but you can also use corn or coconut oil.
The Best Mix Ins for Granola
We like raisins and almonds, but you can add pecans, walnuts, dried cramberries or dates! Just make sure to add any dried fruit after the granola comes out of the oven. They do not need to be added in before baking.

Ingredients
- 8 cup uncooked oats
- 1 cup coconut
- 1 cup brown sugar
- 1/2 cup honey
- 1 1/2 cup water
- 1 1/2 cup oil vegetable, canola, coconut
- 1 teaspoon salt
- 1/2 cup chopped pecans
- 1 cup chopped almonds
- 1 cup raisins or dates
Instructions
Mix everything together thoroughly (except for raisins).
Spread evenly in 2 shallow baking sheets and bake at 275 degrees for 30 minutes. Stir granola and rotate baking sheets. Bake another 30 minutes. Stir granola once more. Bake an additional 15-20 minutes, or until granola and coconut is golden brown.
Add diced dates and raisins as desired. Granola may feel moist, but will dry as it cools.
