A Flavorful Tagalog Recipe

If you’re a fan of Filipino cuisine, you’re probably familiar with the classic dish called adobo. Adobo is a popular Filipino dish known for its tangy and savory flavors. While there are many variations of adobo, one version that stands out is the Chicken Adobo with Potatoes. This recipe adds an exciting twist to the traditional adobo by incorporating potatoes into the mix. In this blog post, we’ll guide you through the process of cooking this delectable dish step by step.

Getting Started: Prep and Ingredients

Before diving into the cooking process, it’s important to gather all the necessary ingredients. While we won’t provide the exact measurements here, you’ll need chicken (preferably bone-in for added flavor), potatoes, garlic, onion, soy sauce, vinegar, sugar, laurel leaf, black pepper, magic sarap (a popular Filipino seasoning), and patis or salt.

Step 1: Sauté the Aromatics

To begin, heat some oil in a saucepan over medium heat. Once the oil is hot, add minced garlic and finely chopped onions. Sauté them until they become fragrant and translucent, usually taking around a minute. This step infuses the dish with a delightful aroma and adds depth of flavor.

Step 2: Stir Fry the Chicken

Now it’s time to add the star ingredient: chicken. Stir fry the chicken in the saucepan, allowing the meat to cook until most of the liquid released by the chicken has evaporated. This process caramelizes the chicken, resulting in a rich and flavorful base for the adobo.

Step 3: Introducing the Sauce

Once the chicken is nicely browned, it’s time to add the key components of the adobo sauce. Pour in soy sauce, vinegar, sugar, laurel leaf, and black pepper. These ingredients contribute to the unique tangy and savory flavor profile that adobo is known for. Stir the sauce thoroughly, ensuring it coats the chicken evenly.

Step 4: Simmering with Potatoes

Now it’s time to bring the potatoes into the mix. Add the diced potatoes to the saucepan, making sure they are evenly distributed. To ensure the potatoes cook properly, add 1/2 cup of water to the saucepan and cover it with a lid. Simmer the dish for approximately 15 minutes or until both the chicken and potatoes are fully cooked and tender.

Step 5: Adjusting the Seasoning

Before serving, take a moment to taste the adobo. If you feel it needs a bit more flavor, you can add magic sarap and patis (fish sauce) or salt to enhance the taste. These seasonings provide an extra boost of umami and saltiness, making the dish even more delightful.

A Delectable Twist on a Classic Dish

Congratulations! You’ve successfully cooked a mouthwatering Chicken Adobo with Potatoes. The addition of potatoes elevates this dish, offering a delightful contrast in texture and an extra layer of heartiness. The sauciness of this adobo version sets it apart from other adobo recipes you might have come across. Cooking Tips for Chicken Adobo with Potatoes:

  1. Choose the Right Cut of Chicken: Opt for bone-in chicken pieces, such as thighs or drumsticks, when making Chicken Adobo with Potatoes. The bone-in pieces add extra flavor and help keep the meat moist during the cooking process.
  2. Brown the Chicken: Before adding the sauce ingredients, take the time to brown the chicken in the pan. This step adds a rich caramelized flavor to the dish and enhances its overall taste.
  3. Adjust the Seasoning: Adobo is known for its balance of salty, tangy, and savory flavors. Taste the sauce before simmering and adjust the seasoning as needed. If you prefer a saltier taste, add a touch of patis (fish sauce) or salt. If you want more depth of flavor, a dash of magic sarap or additional spices like black pepper can be added.
  4. Simmer Slowly: Once the potatoes are added to the sauce, it's important to simmer the dish slowly. This allows the flavors to meld together and the potatoes to cook thoroughly. Low to medium heat is recommended to avoid burning the sauce or overcooking the chicken.
  5. Test for Doneness: To ensure that the chicken and potatoes are cooked to perfection, test them for doneness. Pierce the chicken with a fork or knife to check if the juices run clear and the meat is no longer pink. The potatoes should be fork-tender when cooked through.
