Use the mini peppers if you don't want to have leftover cut peppers or you can use 1 pepper in a single color if you prefer.

Ingredients

  • 12 oz diced ham
  • 1 cup tri-colored bell pepper seeded and sliced
  • 4 scallions sliced with greens and whites separated
  • 8 oz pineapple tidbits drained
  • 4 eggs
  • 4 tablespoon butter
  • 2 teaspoon sesame oil
  • ¼ cup teriyaki sauce add more to taste if desired
  • 3 cups cooked rice chilled

Instructions

  • Saute ham, scallion whites, and peppers. Add ham, chopped bell pepper and white parts of the scallions to a large skillet over medium-high heat. Stir and saute for about 5-7 minutes or until pepper soften a bit and the ham browns.

  • Add pineapple. Drain and add pineapple bits to the skillet. Cook with the ham and veggies for about 2 minutes.

  • Add egg. Reduce heat to medium-low and push everything to one side of the pan. Crack the eggs into the open area of the skillet and scramble using your utensil. Sir and cook until eggs are no longer wet.

    Move everything from the pan to a large plate.

  • Season and heat rice. Add butter and sesame oil and increase heat to medium-high heat.

    Add cooked rice to the pan. Pour over teriyaki sauce. Stir until rice and sauce are combined.

  • Combine all ingredients. Add ham, veggies and egg back to the pan and toss until everything is combined.

  • Garnish and serve. Top with scallion greens and serve!

Notes

  • I like to use the mini peppers for this recipe but any bell peppers will work.
  • Use salted butter or replace with additional oil if you prefer.
