1 cupDried apple slices, the softer style (Main)
10 largeMejdool dates, stones removed
1 cupRaw almonds
1 cupToasted walnuts, very fresh
½ cupRaisins (Main)
6Dried apricots, preferably NZ apricots (Main)
½ tspVanilla, ground powder, or remove the seeds from 1 vanilla bean (Main)
1 servingCoconut threads, for rolling (Main)

Directions

  1. Place apple slices in a small bowl and cover with warm water. Leave to soak and soften for 10 minutes.
  2. Place remaining ingredients, except coconut, in the food processor. Drain and discard any liquid from soaking apple slices and place them in the food processor with other ingredients. Process until just beginning to come together, leaving some texture in the fruit and nuts.
  3. Roll mixture into even-sized balls and roll in the coconut thread to coat. Keep in an airtight container in the fridge.
