"I am posting this recipe in memory of my dear friend, Dot, who died in 2008. Dot was a wonderful lady and matriarch of a large and fascinating family. She was also an avid and excellent cook. It didn't matter when you arrived at Dot's home, there was always some freshly made goodie for you to sample. These puffs were just one of her offerings. The yield is a guess, as I forgot to write down what she said. Love you, Dot, and miss you!"

 1. I just finished making these delish puffs. After reading the reviews of flattening, I decidedd to experiment and I think I have got it. I added 3 tablespoons additional flour which help it to stay together, ( the look like bon bons). I used a small ice cream scoop and used a silpad. After taking them out of the oven, I immediately had one and found that it was bland and was missing something.I had some leftover bacon grease from breakfast and decided to brush the tops with bacon grease and sprinkled with coarse sea salt and coarse pepper. It made them perfect. Next time I make them I will add the salt and pepper in the batter, plus more cheese and maybe a dash of hot sauce. Yummo I hope this helps.

Sorry, I forgot to mention that I halved the recipe on everything except the egg.

 2. Hey MissMaggie, how come you got this recipe and not the rest of us? Sounds great and I will try it to take on the boat this weekend. . What others do you have up your sleeve? Dotsdaughter

 3. This was a wonderful after school snack that could be whipped up in just a few mins. I did as other reviewers suggested and added extra flour(3 Tbsp) as well a using an ice cream scoop . They puffed up beautifully. They were gone in half an hour . I used regular cheddar cheese and thought they needed a bit of salt but that's subjective. Next time I'm going to add chopped chives . Thanks for sharing.

 4. Absolutely Fabulous! I made a double batch, and half were gone before I finished baking them! LOL! I added the extra 3Tbsp of flour, and mine were still flattened. I may add finely chopped fresh jalepenos next time.

 5. I made these for new years, doubling the recipe. They were a hit! I'm planning on making them a bit smaller next time, and adding both salt and pepper. They did flattened out, so I'll use more flour next time. Otherwise, they were perfect!

I am one of 9 kids -- actually right in the middle which makes me the most interesting and cool as well as the one who has "it all together"::)) - or at least I think so!Now that I am retired, I love to cook. No more do I get home around 8.30 at night and think -- Oh hell, I have to cook dinner.I belong to the most amazing family. My Mum -- who passed away in July 2008 at the ripe old age of 90 always used to say -- "keep the family together" -- and we do. It is so easy to pick up the phone and tell my siblings I love them.I am lucky that a lot of my friends are great cooks, so we often swap recipes. I am exceedingly jealous of those who are 'natural' cooks and don't need a recipe. I am the opposite.Besides cooking, I like the theatre, music, gardening, trying to paint -- another thing that doesn't come naturally -- and meeting people. My DH was born in America and together we have two toy poodles -- Elliott & Connery -- a cat named NUC (passed away March 2009) -- four chickens and a few koy fish.DH is GRADUALLY taking an interest in my vegetable garden - one can only live in hope::))
